In

The Food
and Nutrition Research Institute of the Department of Science
and Technology (FNRI-DOST) has just developed a juice product
from carrots and flavored with pineapple and mango.
The beta-carotene
rich juice was developed by Ms. M.E.G. Fernandez, Ms. W.N.
Lainez, Ms. J.R. Tobias and Ms. D.A. Diaz of FNRI. The researchers
found that carrot-mango juice contained 720 mg beta-carotene
per 100 g. Carrot-pineapple juice had lower value, 566 mg.
With pH from 4.6-4.7, the products were acceptable in terms
of color, odor, taste and consistency.
One serving
of 250 mL carrot-mango juice provides 26% Recommended Dietary
Allowance (RDA) for Vitamin A of an adult reference man, while
that of carrot-pineapple is 20% RDA.
The juice
products will provide the consumers with value-added food
items in terms of beta-carotene in its natural form which
may help prevent cancer and other diet-related lifestyle diseases.
For entrepreneurs and those engaged in the food business,
this product has a good potential for the local and export
markets.
